Brats

Brats cooked in the pressure cooker and then finished on the grill.

  1. Pile fresh (refrigerated or room temperature, not still frozen) brats on a steamer tray in pressure cooker, cross hatched to maximize circulation of steam.
  2. Sprinkle on top of the brats:
    • 1-½C of water or other favorite liquid, like beer.
    • Some sliced onion
    • ¼t garlic powder
    • ¼t chili powder
    • A slice of banana pepper
    • Freshly ground black pepper
    • ⅛t paprika
  3. Steam eight minutes on high (15psi), natural release (about 4.5 minutes).
  4. Transfer brats to a pre-heated grill, and cook eight to ten minutes a side.
