- Slowly heat cast iron or carbon steel pan(s) to around 350F
- Cut thick slices of bread - ½" to ¾" thick
- Toast each slice before dipping and frying
- Mix dipping solution in a shallow container that is long & wide enough to hold a bread slice:
- 1 egg (or 1T ground flaxseed + 2-½T - 3T water; let sit 5 minutes)
- ⅛t ginger
- ½t cinnamon
- ½t olive oil
- ½t nutmeg
- 1/16t cardamom
- ground pepper
- soy milk (or almond milk or cow milk)
- ½C => 4 slices
- ¾C => 6 slices
- Dip each toasted bread slice on both sides into the dipping solution and get the surface wet, but don't soak the bread; just enough to get the top and bottoms sides wet
- Fry each piece for about 3-4 minutes on the first side and 2-3 minutes on the reverse
