French Toast

Yield: About 6 slices

  1. Slowly heat cast iron or carbon steel pan(s) to around 350F
  2. Cut thick slices of bread - ½" to ¾" thick
  3. Toast each slice before dipping and frying
  4. Mix dipping solution in a shallow container that is long & wide enough to hold a bread slice:
    • 1 egg (or 1T ground flaxseed + 2-½T - 3T water; let sit 5 minutes)
    • ⅛t ginger
    • ½t cinnamon
    • ½t olive oil
    • ½t nutmeg
    • 1/16t cardamom
    • ground pepper
    • soy milk (or almond milk or cow milk)
      • ½C => 4 slices
      • ¾C => 6 slices
  5. Dip each toasted bread slice on both sides into the dipping solution and get the surface wet, but don't soak the bread; just enough to get the top and bottoms sides wet
  6. Fry each piece for about 3-4 minutes on the first side and 2-3 minutes on the reverse
