Small-batch Spaghetti


Yield: Approximately 2-4 servings

Recipe #1

Notes:

  1. Pre-heat a heavy, enameled cast iron (29cm) or stainless steel casserole on medium-low heat.
  2. In a small pressure cooker add:
    • ½t olive oil
  3. Sauté these vegetables until onion is translucent:
    • ½ medium onion, chopped medium
    • 1 carrot, chopped
    • ¼t freshly ground black pepper
  4. Add the following spices and fry for two minutes:
    • One of:
      • ½t of granulated garlic
      • 1 clove garlic, crushed
    • 2t basil leaves, crushed
    • 1t oregano leaves, crushed
    • ½t thyme leaves, crushed
    • ½t rosemary leaves, crushed
    • ¼t pepper flakes
    • ⅛t ground cumin
    • ⅛t ground chili powder
    • ½t mint flakes, crushed
  5. Add to the pressure cooker:
    • ¼C red or white wine
    • 14-½ oz of diced tomatoes
  6. Pressure cook on high for 2 minutes
  7. Transfer contents of pressure cooker to casserole and add:
    • ½t molasses, or ½t honey if molasses unavailable
    • 2 bella mushrooms, chopped
    • 1T yeast flakes
  8. Simmer for one hour, partially covered, on low heat
  9. Serve over hot whole wheat and/or regular spaghetti noodles

Notes: Maybe next time add a tablespoon of tomato paste?

  1. Sauté:
    • 4 bella mushrooms
    • ½ onion
    • ¼ (green) bell pepper
    • 3 basil ice cubes
  2. Add one 14oz can of cherry tomatoes in tomato juice ('Mutti' is one brand)
  3. 1 clove garlic or ½t granulated garlic
  4. ½t thyme
  5. ½t "tuscan sunset" spice mix (basil, oregano, red bell pepper, garlic, thyme, fennel, black pepper, anise)
  6. Pinch red chili flakes
  7. 1T yeast flakes
  8. ¼C wine & a little water to wash out can

  1. Sauté 1/2 large onion
  2. ½ can whole tomatoes
  3. 1 Tb homemade Italian seasoning
  4. ¼C chardonnay
  5. Simmer 20-30 minutes

Notes: A good sauce, but possibly slightly bitter due to too much wine? I added to mine: shredded Romano and a ground beef & onion mixture left over from rice & beans.

  1. One can peeled 28oz San marzano tomatoes
  2. Some fresh tomatoes
  3. green onion
  4. 3/4 green pepper
  5. 2 cloves garlic
  6. 1/3C red wine (too bitter?)
  7. 2 bay leaves
  8. 1/4t chili powder
  9. 9 drops hot sauce
  10. pepper
  11. 1/2T? Oregano
  12. 1/2T? Italian seasoning
