Notes:
- Pre-heat a heavy, enameled cast iron (29cm) or stainless steel casserole on medium-low heat.
- In a small pressure cooker add:
- Sauté these vegetables until onion is translucent:
- ½ medium onion, chopped medium
- 1 carrot, chopped
- ¼t freshly ground black pepper
- Add the following spices and fry for two minutes:
- One of:
- ½t of granulated garlic
- 1 clove garlic, crushed
- 2t basil leaves, crushed
- 1t oregano leaves, crushed
- ½t thyme leaves, crushed
- ½t rosemary leaves, crushed
- ¼t pepper flakes
- ⅛t ground cumin
- ⅛t ground chili powder
- ½t mint flakes, crushed
- Add to the pressure cooker:
- ¼C red or white wine
- 14-½ oz of diced tomatoes
- Pressure cook on high for 2 minutes
- Transfer contents of pressure cooker to casserole and add:
- ½t molasses, or ½t honey if molasses unavailable
- 2 bella mushrooms, chopped
- 1T yeast flakes
- Simmer for one hour, partially covered, on low heat
- Serve over hot whole wheat and/or regular spaghetti noodles

Notes: Maybe next time add a tablespoon of tomato paste?
- Sauté:
- 4 bella mushrooms
- ½ onion
- ¼ (green) bell pepper
- 3 basil ice cubes
- Add one 14oz can of cherry tomatoes in tomato juice ('Mutti' is one brand)
- 1 clove garlic or ½t granulated garlic
- ½t thyme
- ½t "tuscan sunset" spice mix (basil, oregano, red bell pepper, garlic, thyme, fennel, black pepper, anise)
- Pinch red chili flakes
- 1T yeast flakes
- ¼C wine & a little water to wash out can

- Sauté 1/2 large onion
- ½ can whole tomatoes
- 1 Tb homemade Italian seasoning
- ¼C chardonnay
- Simmer 20-30 minutes

Notes: A good sauce, but possibly slightly bitter due to too much wine?
I added to mine: shredded Romano and a ground beef & onion mixture left over from rice & beans.
- One can peeled 28oz San marzano tomatoes
- Some fresh tomatoes
- green onion
- 3/4 green pepper
- 2 cloves garlic
- 1/3C red wine (too bitter?)
- 2 bay leaves
- 1/4t chili powder
- 9 drops hot sauce
- pepper
- 1/2T? Oregano
- 1/2T? Italian seasoning
