Pot Roast

  1. Heat heavy cast iron pot on stove with:
    • 2T oil
  2. 2-½lb beet chuck boneless petite pot roast ($22.25 @ $8.99/lb)
  3. Sear pot roast about 2 minutes on all sides
  4. Remove roast
  5. Add:
    • pepper
    • 4 cloves garlic
    • ¾t salt
    • potatoes, cut in half or quarters
    • 4 or 5 medium carrots, sliced thickly
    • 1 stalk celery, chopped finely
  6. Place roast on top of vegatables
  7. Roast with lid in 350F oven for 3? hours
  8. Remove from oven and let roast rest for 15 minutes before serving to reabsorb moisture


Notes: I ran out of time once and pressure cooked the roast for 2 minutes before the oven.
