- Heat heavy cast iron pot on stove with:
- 2-½lb beet chuck boneless petite pot roast ($22.25 @ $8.99/lb)
- Sear pot roast about 2 minutes on all sides
- Remove roast
- Add:
- pepper
- 4 cloves garlic
- ¾t salt
- potatoes, cut in half or quarters
- 4 or 5 medium carrots, sliced thickly
- 1 stalk celery, chopped finely
- Place roast on top of vegatables
- Roast with lid in 350F oven for 3? hours
- Remove from oven and let roast rest for 15 minutes before serving to reabsorb moisture
Notes:
I ran out of time once and pressure cooked the roast for 2 minutes before the oven.
