- Cook 1C pinto beans (19h soak, 4m steam, sit 20m?)
- Cook 1-½C brown rice
- Reserve all but about 1C water used for cooking
- Add:
- Simmer for >= 10 minutes, stirring often in the first 10 minutes, adding reserved water as necessary to keep the mixture wet
- Serve on tortillas by layering:
- Hot brown rice
- Pinto beans
- Salsa
- Guacamole
- Lettuce
