Tortillas

  1. Cook 1C pinto beans (19h soak, 4m steam, sit 20m?)
  2. Cook 1-½C brown rice
  3. Reserve all but about 1C water used for cooking
  4. Add:
  5. Simmer for >= 10 minutes, stirring often in the first 10 minutes, adding reserved water as necessary to keep the mixture wet
  6. Serve on tortillas by layering:
    • Hot brown rice
    • Pinto beans
    • Salsa
    • Guacamole
    • Lettuce
